How to Make Beef Potato Hash

Lancashire potato hash is proper comfort food. This retro dish often called 'tattie'ash', 'tayter'ash' or 'potato ash' is a one pot classic made with just minced beef, onions, carrots, potatoes and beef stock it's a very thrifty, economical family dinner. Warming and filling and super easy to make.
Lancashire Potato Hash is a recipe my grandma used to cook when I was a child.
She'd simmer up huge panfuls of the stuff, there was eight people lived in our house and proper Lancashire potato hash was a low cost easy way to feed us all!
Typically we'd get a big bowlful of Lancashire potato hash with a dollop of pickled red cabbage on the side and a plateful of buttered white bread to dip in and mop up the gravy with.
Proper norther comfort food – cheap, easy and filling. Cooking up a pan of minced beef hash now takes me right back to being a kid, sat on the step eating dinner!
Ingredients for Lancashire Potato Hash
- 15ml olive oil
- 1 onion
- 500g beef mince
- 400g carrots
- 300ml beef stock
- 1kg potatoes
- salt and pepper to taste
- heaped tsp cornflour – mixed into a drop of water (if needed to thicken)

How to make Lancashire Potato Hash
- Peel and chop the onions into rough chunky slices.
- Add the olive oil to a large saucepan
- Gently sauté the onions until they're softening
- Tip the beef mince into the pan and break up with a wooden spoon.
- Brown the mince over a medium heat – stirring with a wooden spoon to stop it sticking.
- Tip the carrots into the pan and mix them into the minced beef and onions.
- Make up the beef stock with boiling water.
- Tip the stock into the saucepan and stir.
- Bring the pan to the boil, then reduce the heat and put the lid on – simmer for around 30 minutes.
- Once the mince, onions and carrots are cooked through – peel and thinly slice the potatoes.
- Gently mix the sliced potatoes into the minced beef and onions.
- Bring the Lancashire potato hash back up to the boil, then reduce the heat and simmer with the lid on for about 20 minutes or until the potatoes are tender.
- Once the Lancashire potato hash is cooked through you may need to thicken the gravy.
- If the gravy needs thickening you can do this using a tsp of cornflour mixed into a drop of cold water and stirred through the stew.

Sure you can – just remember they take a little less time to cook – maybe 10 minutes would be long enough

How to make potato hash pie
Once your potato hash is cooked – tip it into a pie dish and add a pastry lid – we love the ready rolled pastry packs – just because they're so easy!
Cook in the oven for around 20-30 minutes or until the pastry is cooked through and golden brown.

You can't go wrong with a side pickled red cabbage or beetroot, some crusty bread and a dollop of brown sauce or ketchup.

Make Potato Hash recipe your way
- Want more veggies – add chopped parsnip or swede
- Don't fancy beef – try lamb mince and serve with mint sauce
- Make potato hash with corned beef – 'corned beef hash' and make it with a can or two of corned beef.
- You could use leftover roast meat from the Sunday dinner instead of mince.
- Need it to stretch further – add a can or two of Heinz baked beans – this might sound odd but it kinda makes a tomato-y gravy that still tastes great!

Ingredients
- 15ml olive oil
- 1 onion
- 500g beef mince
- 400g carrots
- 300ml beef stock

- 1 tsp cornflour
Instructions
- Add the olive oil to a large saucepan and saute the onions over a low heat until softened.
- Add the beef mince and brown whilst gently stirring and breaking it up.
- Add the carrots and hot beef stock - season with salt and black pepper.
- Bring the stew to the boil, then reduce the heat and simmer with the lid on the pan for around 30 minutes.
- After 30 minutes tip in the sliced potatoes and stir in gently - bring the stew back to the boil and simmer with the lid on for around 20 minutes or until the potatoes are tender.
- If the gravy needs thickening - mix a tsp of cornflour with a drop of water and stir it through the stew - warm through until thickened.
